Antibody Technologies for Food Applications

Telling fish tales from truth can thwart more than a pocketbook scam. When Floridians favorite fish is swapped with cheaper foreign imports raised under dubious conditions, fish fraud becomes a potential health hazard. Professor of Food Science Peggy Hsieh (pronounced "Shay") has developed a fast, easy test - with a patent pending - to keep fish suppliers and restaurants honest, and Florida seafood lovers safe and satisfied.
